CHARACTERISTICS BRUT LUMINOUS
Blending: 50% Chardonnay, 25% Pinot Noir, 25% Meunier.
Fermentation: 100% alcoholic fermentation in small oak barrels. No malolactic fermentation.
Lees Aging: 6 years.
Dosage: 9 g/L.
Disgorgement: the cuvée is shipped three to six months after.
TASTING NOTES
Bright with a beautiful gold tinted and concentrated.
The nose is captivating and precise, it clearly expresses the marine world, the pebble, the shell, the white flowers and the aniseed root medium associated with fennel. The saline tension is palpable, after a few minutes a densification takes place and delivers noble perfumes of butter, cream, praline then honey and mocha. The impression of general volume is strong while the wine is illuminated with purity gradually.
The mouth is delicate and presents a natural fat thickness, one savor by greediness the peanut, caramelized salted butter, the pastry and the fine wood. Inside this texture, life is energetic and tasty, resulting in a resolutely precise finish.
WINE PAIRING
This cuvée will go perfectly with smoked salmon with tarragon, a fillet of cod in lemony white butter and fresh chives.
