2012, A VINTAGE OF EXCEPTION
Right from the beginning of July substantial days of sunlight foreshadowing an exceptional harvest. Furthermore, a limited number of grapes per vine favored an exceptional ripening.
TASTING NOTES
The shine is transparent on a clear and bright gold.
The character of the Chardonnay is faithful and very identity, the first scents reveal the macerated white fruits on a slightly mentholated fatty middle. The intensity then becomes clear to candied yellow citrus, white flowers and some aromatic herbs. Finally, the density increases, one perceives the sap, the spring fern and the fine chalk.
The palate is unctuous, velvety and noticeably honeyed, it asserts itself in its heart by a tension reminiscent of the granny apple and lime. The final is chalk powder, seaweed flavors and lemony graphite perceptions are tasty.
WINE PAIRING
This cuvée will enhance delicate recipe such as a lime-scallop ceviche or some grilled red-mullet marinated with thyme and olive-oil.
