CHARACTERISTICS CUVÉE ROSÉE
Blending: 50% Chardonnay, 25% Pinot Noir, 25% Meunier.
Fermentation: 100% alcoholic fermentation in small oak barrels. No malolactic fermentation.
Lees Aging: 6 years.
Dosage: 9 g/L.
Disgorgement: the cuvée is shipped three to six months after.
TASTING NOTES
Orange skin adornment.
The first fragrances are dark: licorice and dried nuts. The progressive light is tinted towards the very fine fruity red, the grenadine mixture, the wild strawberry and the wild raspberry. Citrus fruits such as blood orange invigorate the sensations, they counter perfectly balance the evocations of wet earth, clay and dried flowers. Mure cream fragrances are then introduced, the blend is complex and racy, the bitter orange peel, the orange blossom, the black tea and the exotic pepper define a respected and very high-quality Pinot Noir under a finely wooded film.
The palate is transparent, rigorous and finely fruity, with a semi-thick texture, its taste reveals the precise acidulated skin and orange pulp, mandarin and wild strawberry.
The finish is pure and tasty.
WINE PAIRING
This cuvée will be the perfect companion for a crispy hoven-cooked cod filet with a clementine reduction of smoked- salmon nems spiced-up by some espelette black-pepper.
